What we do at festivals
We bring a Mediterranean food truck — modern street food cooked to order, fast service, the line moves. We've worked festivals with up to 20,000 attendees, both as the headline food vendor and as part of a shared lineup.
The menu is tuned for high-volume service without losing the chef-driven character: bao buns, loaded fries, fresh seafood plates, and seasonal specials. Vegetarian, vegan, and gluten-free options on advance notice.
Format & logistics
Single-vendor or shared lineup — both formats work. We arrive set up, run service through the event, and clean down. Travel anywhere in Croatia is included in the quote.
On-site we need power and water hookup at the venue. We'll walk through power amperage, vehicle access, and timing during planning so there are no surprises on the day.

The festival side of Gregos was built in collaboration with Chef Matija Pavlic, whose experience includes Michelin-starred kitchens — among them the two-Michelin-starred The Ledbury in London. Festival service rarely meets that pedigree, and the difference shows in the menu we cook out of the truck.
The street-food format is fast, the volume is high, the line keeps moving — but the cooking still comes from a chef-led kitchen. Different format from the wedding work, same standard.

How fast is service at peak?
Service is tuned for festival pace — line designs, prep flow, and menu choice are all optimised for throughput. Specifics depend on guest count and number of menu items; we map this in the quote.
Can we share the festival lineup with other vendors?
Yes — we work both as the single headline food vendor and as part of a shared lineup. Tell us the format during the inquiry.
What menu works best at high volume?
Street food formats — bao buns, loaded fries, wraps, fresh seafood plates — move fastest. We propose a focused menu (5–8 items) for festival service rather than a long list.
Do you supply your own power and water?
We need a hookup at the venue. We can run a generator if the festival has no grid power, but it adds to the quote. Water is required from the venue.
Do you do multi-day festivals?
Yes — we've done multi-day festivals and touring events. The truck stays on site, the team rotates, the menu can shift across days.
What's your festival lead time?
4–8 weeks for festival programming. The earlier you book, the more menu and logistics flexibility we have.
